Clean, nutritious & rich in protein. We repeat this at least once a week. Makes for a great clean out the fridge recipe too!
INGREDIENTS
6 oz bacon (6 slices) chopped
5 cups Mixed greens of choice
2 cooked Salmon filets, blackened (or protein of choice)
2 hard-boiled eggs, quartered
1 large avocado sliced
1 cup cherry tomatoes halved
(we like to use heirloom tomatoes)
1 Cucumber, sliced & halved (we like to remove the centres/seeds. Makes for a crunchier texture)
1/2 cup blue cheese crumbled (or feta cheese, or slices of aged white cheddar)
1 celery stick, sliced
FOR DRESSING
We like to keep it simple with 4 lemon wedges and some extra virgin olive oil + S&P to taste.
DIRECTIONS
Pretty straight forward. Prep all ingredients as above, and combine. Voila
