We really wanted something that felt like a treat without it being bad... so we made our own fatty, nutty bars!
Ingredients
1 cup toasted almonds, roughly chopped (toast them yourself @ 350 degrees for 8 mins)
1/2 cup roasted peanuts (or macadamia, walnuts etc)
1/4 cup sugar-free chocolate chips like Lily's
4 T sesame seeds (or hemp hearts)
4 T sunflower seeds
1 T chia seeds
1/4 tsp salt
2 T melted coconut oil
3 T almond or peanut butter (we used Fatso)
1 t vanilla
Egg white, lightly beaten
Cacao butter
Monkfruit or stevia drops for sweetening
Directions:
Line 20 cm baking in with parchment
Combine all nuts, seeds, chocolate chips, salt in a bowl
In small sauce pan, melt the coconut oil and nut butter together with vanilla
Pour melted mix into the seeds.
Stir in egg white.
Put mixture into tin and press down so it is even.
Put in oven for 10 mins at 350 degrees.
Once cooled, put in freezer.
Once hardened and cooled in freezer, melt cacao butter over water bath with 10 drops of monkfruit sweetener. Pour over bars. Put back in fridge or freezer to set.
Optional - drizzle 100% melted dark chocolate over.
Cut into squares or rectangles.
Store in fridge.
