SARDINE (or any fish) FRITTERS


 

These are the BEST. They are simple, healthy, and everyone who we've ever fed them to, loves them. Toddlers included.... even OTHER people's toddlers! Be mindful to select wild caught fish (for the sake of your health). We have used canned salmon in this recipe too, but we just cut the amount of almond flour in half. Try tuna too! Although we would cut the almond flour completely since tuna is drier...also note that tuna is super high in Mercury, so you shouldn't eat it so often. But sardines and salmon are amazinggggggg for you! Eat. Up.

 

Ingredients:

- 2 cans of wild sardines, drained

- 2 eggs

- 1/2 cup of almond flour

- 2 cloves of minced garlic

- 1/2 tsp fine pink Himalayan sea salt

- Avocado oil, for frying


Directions:


Mash all ingredients together in bowl (excluding the avocado oil).


In large frying pan, pour oil in pan and heat over medium heat (we like the pan completely covered and about 1cm high)


With your hands, make round fritters (approx 2" diameter) and fry for approx 3 mins per side until golden. Remove from pan and place on plate lined with paper towel.


Voila! You can serve these alone, with squeezed lemon, chopped green onion, mayo, salad, or as my 4 year old prefers, organic ketchup!
