KETO Protein Breakfast Tostada

Pulled Chicken, Crispy bacon fat tortilla, bacon, egg, avocado. The ultimate Keto Meal.


 

Fajita Recipe:


In Slow Cooker (on high)

  • Drizzle Avocado oil (Chosen Foods)

  • Slice Peppers (Red and Green, we used 1 of each)

  • 20 drops (OOO Flavours) or 1 Medium Onion chopped

  • 3 Chicken Breasts (Depending on size, 4)

  • 1T Red Pepper Flakes

  • 2t Cumin

  • 1/2T Chili Powder

  • 1t Paprika

  • S+P To taste

  • 1C Roasted tomatoes

  • 1/4C Boiled tomato puree

  • 1/4C Chicken Stock

We use this same recipe for both pulled chicken and Fajitas, in this case we used it for a pulled chicken.


For pulled: cook chicken whole and pull apart when done, for fajita: cut raw chicken into strips before cooking.

 

Tortilla Recipe:


From one of our favourite recipe makers Joe Duff (recipe linked)


This recipe is fool proof guys! So easy!!!! ***we added 25 drops of (OOO Flavours) Corn Bread Flavour and we Pan fried them to a crispy shell in bacon fat.


Assembly:


  • cook bacon. Set aside.

  • Fry tortilla in bacon fat. Set aside.

  • Fry an egg.

  • Spread fajita mix on crispy tortilla shell, top with fried egg.

  • Crumble bacon on top.

  • Serve with avocado and jalapeños.


We seasoned with Redmond Real Salt and Everything but the Bagel seasoning from Trader Joes


(You can also add cheese or any toppings your heart desires).
