KETO Strawberry Banana Boston Cream Cupcake

Two favourites in an incredibly rich and moist Cupcake. Swap out the Strawberry with Chocolate, for a lush Chocolate Banana Combo

 

Ingredients:


For the Cupcake:


  • 2 Lg Eggs

  • 1/2 Cacao Butter (Coconut oil also OK)

  • 1 Teaspoon Vanilla Extract

  • 1 1/2 Cups of Almond Flour

  • 1/2 Sweetener

  • 1 Teaspoon Baking Soda

  • 1/4 Teaspoon of Salt

  • 30 drops OOO Flavours - Banana Flavour (or any Banana Flavour extract to taste)


For the Filling:



For the Frosting:


  • 2 Tablespoons Marscapone

  • 2 Tablespoons Cream Cheese

  • Remainder of Strawberry pudding from filling (not used in the centers)


 

Directions:


Preheat oven to 350F


In a medium sized bowl, beat Eggs, Cacao Butter, Vanilla extract & Banana Extract until smooth.


In a separate bowl mix Dry ingredients. Slowly incorporate dry with wet. Mix slowly to form a smooth batter.


Evenly Spoon the mixture into cupcake liners and bake for 20 mintues, or until the tops are golden brown and cupcake are cooked through. Allow to cool to room temperature.


Make the strawberry pudding according to package directions. Place in fridge to cool and set.


Assembly:


Cut a small hole into the tops of each cupcake and hollow out the centers. Divide the Strawberry pudding evenly filling the centers, place the pieces that were cut back on top to cover.


Pipe icing.


Serve.
