KETO BB Muffins w/Lemon Whip



 

ZERO Sugar Alcohols, Blueberry Muffin with a zesty Lemon whip. ’Nuff said.

 

Ingredients for Muffins


  • 2 Cups of Almond Flour

  • 1/2 Cup Coconut Flour

  • 45mg Stevia

  • 10 Drops OOO Flavours, pure Monk Fruit

  • 1 1/2 tsp Baking Powder

  • 1/3 C melted coconut oil

  • 1/4 C Melted Butter

  • 3 Large Eggs

  • 1/2 C Nut Milk

  • 1 tsp Lemon Extract

  • Zest from Half a Lemon

  • 1/2 - 3/4 C of fresh Blueberries


Ingredients for Whip


  • 1/2 Cup Heavy Whipping Cream

  • Zest from Half a Lemon

  • *optional: 5 Monk Fruit drops. We left our whip unsweetened.


 

Directions:


Preheat oven to 350°

Mix dry ingredients well, add wet ingredients and stir until well incorporate. Line muffin tin and pour or scoop mixture into tin.

Bake for 25-30 mins Remove. Let cool. Add Whip & indulge.
