Ingredients for Muffins
2 Cups of Almond Flour
1/2 Cup Coconut Flour
45mg Stevia
10 Drops OOO Flavours, pure Monk Fruit
1 1/2 tsp Baking Powder
1/3 C melted coconut oil
1/4 C Melted Butter
3 Large Eggs
1/2 C Nut Milk
1 tsp Lemon Extract
Zest from Half a Lemon
1/2 - 3/4 C of fresh Blueberries
Ingredients for Whip
1/2 Cup Heavy Whipping Cream
Zest from Half a Lemon
*optional: 5 Monk Fruit drops. We left our whip unsweetened.
Directions:
Preheat oven to 350°
Mix dry ingredients well, add wet ingredients and stir until well incorporate. Line muffin tin and pour or scoop mixture into tin.
Bake for 25-30 mins Remove. Let cool. Add Whip & indulge.
