KETO Glorious no Grain Granola

We LOVE Granola, but we do NOT love grains and sugar (obvi) - this granola is honestly amazing. We make our own nut milks when we have the time and store the pulp (it freezes very nicely, or keep refrigerated for 4-5 days) just so we can make this granola! Added bonus - no waste!


 

Ingredients


  • 2 cups of nut pulp (we used Almond pulp here, but any pulp will work... just not cashew because it turns more into liquid) We make nut pulp/milk with Ellie's Best Nut bags

  • 1/2 cup shredded unsweetened coconut (we use Let's Do Organic!)

  • 1/2 organic hemp hearts (we use Manitoba Harvest)

  • 1/2 sunflower seeds

  • 1/4 cup chia seeds

  • 1/4 tsp himilayan sea salt

  • 1 T of vanilla extract

  • 2 T cinnamon

  • 1 T fresh grated ginger

  • 2 T orange zest

  • 1/2 cup melted coconut oil (we use Nutiva)

  • 1/2 cup collagen peptides (we like Wild Marine Collagen by Genuine Health )

  • 1 egg

  • 1/4 tsp liquid monkfruit sweetner (we love OOO Flavours)


Additional add-ons once granola is baked and out of the oven:

  • 1 cup coconut flakes

  • 1 cup of chopped, toasted pecans (we drizzled ours in ChocoZero Caramel Syrup)

  • 1 cup of whole flax seeds

1/2 cup hemp hearts

 

Directions


Preheat oven to 300F and line a baking sheet with parchment.


Place melted coconut oil, collagen, egg, cinnamon, vanilla, grated ginger, orange zest, monkfruit, and salt in a bowl and whisk until combined.


In a seperate large bowl, mix nut pulp, shredded coconut, hemp hearts, sunflower seeds, chia seeds . Pour liquid mixture into dry mixture and stir with spatula until combined.


Press mix into the lined pan.

Bake 30 mins (should be golden), then use a spatula to break into clusters and flip.Put back into the oven for additional 40 mins. Once timer goes off, turn off the oven but let granola sit and continue to dry out until completely cooled (about 1 hour).


Put cooled granola into your storage of choice and mix in any of your add-ons!


We used:


1 cup of coconut flakes

1 cup chopped, toasted, pecans - which we then drizzled in ChocZero caramel sauce, let cool and threw into the granola... SO GOOD!

(Would also be great with a keto Maple Syrup)
