Christmas wrapped in one lucious loaf. This one is something that will quickly become a Christmas staple for anyone.
Ingredients
1 1/2 Cup Almond Flour
1/2 Cup Sweetener of choice
1 Teaspoon Baking Powder
Pinch of salt
3 1/2 oz Full Fat Cream Cheese (at room temp)
4 T Coconut oil
4 Eggs
1 t Vanilla
1 Teaspoon Ground Ginger
1 Teaspoon Ceylon Cinnamon
1/2 Teaspoon Clove
Zest from 1 full orange or mandarin
**Zest 1 t of fresh ginger for that exxxxtra***
Instructions
Preheat over at 350°F
Whisk Dry ingredients in 1 bowl
Use hand mixer for wet ingredients in another bowl.
Add dry to wet continuing with the hand mixer.
Pour batter into parchment lined loaf pan and bake for 40mins @ 350 degrees.
These can also be poured into muffin cups, Just bake for less time! 20-25min.
Glaze Ingredients and Instructions
Once loaf is out and cooled mix the glaze and pour on:
1/4 cup powdered swerve
1 Teaspoon Orange extract, or pure orange oil flavour
1 Tablespoon unsweetened almond milk
Zest from 1/2 and orange or mandarin
Mix in with hand mixer Until well combined.
We we like to make a double batch for this loaf to get a bigger loaf. But it works fine either way !
**EXTRA EXTRA**
Citrus Cheesecake filling
6 Tablespoons Butter at room temperature
400g cream cheese (Or marscapone works here too).
1 Tablespoon Powdered Sweetener
(Delicious with or without):
1 Teaspoon or orange l or extract
1 Teaspoon orange zest
Mix all ingredients together until smooth and well incorporated.
If doing this step, pour loaf batter saving about 1/4 of the mix. Scoop the cheese into the center along the entire loaf. Cover with remaining batter.
Add about 15 mins to cooking time.
